Latkes

My best friend since the day I was born (literally) is Jewish, and I have always celebrated Hanukkah with her and her family. While the gelt (chocolate coins) was my favorite part growing up, latkes are my favorite tradition as an adult! My mom used to use leftover mashed potatoes to make pancakes when I was a kid, and over time, I learned how to make them with raw potato as well, I hope you enjoy both versions here.

Tuscan White Walnut Pesto

This recipe came to us from a woman named Merri in Tuscany.  My cousin Daniel did a semester abroad in Italy in 2013 and when my aunt went to pick him up, like my parents did when I studied abroad, she took a two week trip there with my uncle!  While there, they took a cooking course with Merri - right in her home! She showed them this recipe and we've made it a tradition in our family now.
