Leftover Mashed Potato Latkes
1 c. leftover mashed potatoes
1 egg
3 tsp. flour
onion powder, to taste
garlic powder, to taste
pepper, to taste
salt, to taste
Heat a quarter inch of canola oil in a frying pan.
Combine all ingredients until a sticky batter forms.
Working in batches, fry batter until edges turn brown and crispy.
Drain on a plate lined with paper towels.
Serve hot with applesauce and/or sour cream
Latkes
2 russet potatoes
2 eggs
1/4 c. flour
onion powder, to taste
garlic powder, to taste
pepper, to taste
salt, to taste
Heat a quarter inch of canola oil in a ring pan.
Peel the potatoes and shred them on a box grater. Put the shreds onto paper towel and squeeze or press to remove excess moisture. Repeat this step if necessary.
Combine potato shreds with egg, flour, and seasoning, except salt, to taste.
Working in batches, fry spoonfuls of the mixture. Before flipping, sprinkle the tops with salt. Flip when edges are brown and crisp.
Drain on a plate lines with paper towels. Serve with applesauce and/or sour cream.
