Aunt Mary's Ricotta Christmas Cookies

My Aunt Mary makes these cookies every year - because they’re EASY! Baking is not her most favorite Christmas activity, and that’s why these work! So if you don’t LOVE the idea of making cookies - this is the recipe for you!

They don’t have to be perfect. They don’t have to be a specific shape. They can be decorated with a simple shake of sprinkles. And they come out delicious, light, fluffy and mildly sweet (making them perfect not only as a Christmas cookie, but also as breakfast!).

CHOCOLATE CHIP COOKIES SNOWBALL COOKIES

2 sticks of butter, softened to room temperature
2 c. sugar
3 eggs
1 lb. ricotta cheese
3 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
4 c. flour

Cream butter and sugar together.

Add eggs in 1 at a time, mixing after each addition.

Add in remaining ingredients and mix well until a sticky dough forms.

Drop dough by rounded spoonfuls onto a greased (or parchment paper lined) cookies sheet.  The cookies spread a bit so leave about an inch around each one.  If you're using sprinkles to decorate add those now.  If you plan to frost the cookies, bake them first and let them cool completely before using icing or frosting.

Bake at 350 degrees for 12-15 minutes or until bottom edges get golden but tops remain pale.  Cookies should be soft and chewy!
