Ginger Bread Cookies

5 c. flour
2 sticks butter
2 eggs
1 c. dark brown sugar
1/2 c. molasses
1/2 c. honey
1 tsp. baking soda
1 1/2 tsp. salt
4 tsp. ginger
4 tsp. cinnamon
1 1/2 tsp. clove
1 tsp. nutmeg

In a large bowl, cream butter and sugar together.


Add in molasses, honey and eggs.


In a separate bowl, combine dry ingredients and whisk together.


Add dry ingredients to wet 1/3 at a time - mixing each time until dough forms.

Turn dough out onto floured surface and knead until smooth. Wrap in plastic, refrigerate for 1 hour.


Remove dough from refrigerator.  Cut pieces off, roll out to about 1/4 inch thick, cut out and bake at 350 for 8 minutes.  Cookies do not spread, they will hold their size and shape. If you bake for 10 minutes you'll get a crunchier cookie.
