Fried Catfish Sandwich
2 catfish fillets (or tilapia)
1 c. flour
1 tbs. salt
1 1/2 tbs. smoked paprika
1 tsp. cayenne pepper
1 tbs. garlic powder
1 tbs. onion powder
canola oil for frying
potato or brioche bread or roll for serving
Sriracha Mayo
1/2 c. mayo
1 tbs. sriracha
1 clove garlic, minced
1 tsp. lime juice
Pour enough canal oil into a deep fry pan to cover fillet about half way up. Place over medium-high heat.
Combine flour, salt, smoked paprika, cayenne, garlic powder and onion powder in a bowl. Cut fillets to make sure they'll fit nicely on whatever bread you've chosen.
Dredge fish in flour mixture and place in hot oil. They should bubble instantly. Cook for about 2-4 minutes per side, depending on the thickness of the fillet. Make sure coating turns golden brown. Remove from oil and drain on paper towel.
When fillets are cooked, mix sriracha, minced garlic and lime juice into mayonnaise. Warm bread. Spread 2 tbs. mayo on bread, add fried fillets.
