Bruschetta - Two Ways

Crostini
Makes about 20 crostini
1 baguette, sliced on a bias
olive oil spray
salt & pepper
Pre-heat oven to 375°
Place slices on a foil lined cookie sheet. Spray each piece with olive oil, sprinkle with salt & pepper. Place in oven for 10-15 minutes or until tops turn golden brown.
Tomato Bruschetta
4 tomatoes, chopped
1/2 red onion, chopped
2 cloves of garlic, minced
2 tbs. fresh basil, chopped
1 tbs. olive oil
2 tbs. balsamic vinegar
salt & pepper to taste
Combine all ingredients in a large bowl. Allow to marinate for at least 15 minutes. Serve at room temperature as a salad or over crostini. Can be made 1 day ahead. Cover in refrigerator, bring to room temperature before serving.
Ceci Bean Bruschetta
1/2 red onion, chopped
2 cloves garlic, minced
15 oz. can ceci beans (chickpea), drained & rinsed
2 tbs. fresh parsley, chopped
1 tbs. olive oil
2 tbs, white balsamic vinegar
salt & pepper to taste
Combine all ingredients in a large bowl. Allow to marinate for at least 15 minutes. Serve at room temperature as a salad or over crostini. Can be made 1 day ahead. Cover in refrigerator, bring to room temperature before serving.
