Baked Pears with Vanilla Scented Greek Yogurt

Serves 6
3 (very ripe) D’anjou pear – halved & cored (you can cut a little slice off the bottom side to help it stand straight)
4 tsp cinnamon
3/4 c. walnuts, chopped
6 tsp honey
3 c. plain Greek yogurt
3 tsp. vanilla.
Preheat oven to 350 degrees. Butter a 9x13 baking dish.
Place pear halves in a baking dish.
Fill each core with chopped walnuts.
Sprinkle cinnamon over each pear half (it’s ok if some spills into the dish, we’ll get that)
Top each pear with 1 tsp. honey – try to get the honey mostly over the walnuts, it helps prevent them from burning.
Pour a little bit of water or lemon juice into the bottom of the pan – this will make a delicious glaze from whatever cinnamon & honey spilled.
Bake pears for 30 minutes or until tender.
Meanwhile, combine Greek yogurt with vanilla until well mixed. Portion yogurt between bowls.
When pears are done, place one in each bowl over yogurt, pour juices from pan on top and enjoy!
