Latin Bites' Cuban Sandwich
To be honest - Lou Falcon is a very good friend of ours - so it was only natural that at some point we feature his food truck! Like me, Lou has a passion for food and we often enjoy cooking together for family and friends. Swapping tips and recipes and just generally talking about food whenever we can! And of course, we come at it from slightly different perspectives - which is what makes it fun!
Lou’s truck, Latin Bites, serves Puerto Rican and Cuban cuisine with no frills. Familiar, classic dishes with the occasional unique touch. But his best seller, The Big Papi, is what he decided to share with us. That’s their classic Cuban sandwich. Cuban bread (which is generally very soft, perfect for soaking up cooking juices!) is layered with mustard, ham, pickles, pulled pork and swiss! Then toasted both inside and out on a panini press! The result is a foot-long sandwich that can easily feed two - IF someone is willing to share!

Cuban Sandwich
Serves 2
1 (foot-long) loaf, Cuban bread
2 Tbs. yellow mustard
4 slices of ham
1 large pickle, cut into 4 slices lengthwise
4 slices swiss cheese
1/2 C. marinated pulled pork
Cut the bread in half lengthwise. Spread each half with a tablespoon of mustard.
Lay 2 slices of Swiss on each half. Followed by 2 slices of pickles, and then ham. Finally add the pulled pork to each half.
If using a panini press, Press the sandwich while open for about 30 seconds. Open the press, fold the sandwich over so it’s closed and then press again for another 30-45 seconds.
*Alternates: If you don’t have a press, heat a large oven safe skillet over high heat. Place the sandwich in the skillet, fillings down, and use a second, heavy pan to press it down. OR, place the sandwich, open, under the broiler for about a minute, close and broil again until bread is crispy.
