The All Night Bender

I couldn’t think of a better way to celebrate Easter than with a carrot based cocktail! Before you close the window, roll with me for a minute here. Because I promise this drink is REALLY good! Beth Nydick, co-author of Clean Cocktails has done it once again with this one! Loaded with good-for-you ingredients, like carrot juice, lime juice and natural sweeteners like honey - this just might be how the Easter Bunny unwinds after a long night of delivering baskets and hiding eggs!

My favorite part about this drink is it’s uniqueness. You won’t find this at a bar or lounge. And that makes it SO much fun to serve to your guests for a holiday (or, whenever) because they’ll think you’re a genius mixologist! Light and refreshing and full of great Spring flavors, I think you guys will really enjoy mixing up this drink! The All Night Bender
Serves 1

Recommended Barware
Rock Glasses

5 coins fresh ginger
2 oz. gin (or vodka)
1 oz. carrot juice
1/2 oz. fresh lime juice
1/4 oz. honey syrup
Ice
Garnish - lime wedge

For the Honey Syrup:
1 C. honey
1 C. water

Combine honey and water in aa medium pot over medium-high heat and bring to a boil. Reduce the heat to low and simmer, stirring constantly, until the honey has completely dissolved. Remove from the heat and set aside for an hour to steep.

Once cooled, store in an airtight container in the refrigerator for up to 3 months.

For the Drink:
Muddle the ginger coins in a cocktail shaker. Add gin, carrot juice, lime juice, honey syrup and some ice and shake for 10 seconds.

Strain into an ice-filled rock glass. Garnish with a lime wedge and enjoy!
