Turkey Burger
Makes 4, 1/4 lb. burgers
1 lb. dark turkey meat, ground
1/2 c. mayonnaise
1/2 tsp. cumin
1/2 tsp. ground coriander
1 tsp. smoked paprika
1 garlic clove
1 tbs. olive oil
2 tsp. lemon juice (or about 1/2 a lemon)
salt & pepper
lettuce, tomato, onion, cheese & buns
Combine mayonnaise, cumin, coriander and paprika.
Use a microplane to grate the garlic clove into the mixture. Stir in olive oil and lemon juice and mix to combine.
Season turkey meat with salt & pepper. Add 2 spoonfuls of the aioli to the ground turkey meat and mix with your hand. Once the mixture is combined, divide into 4 equal portions and form into patties, pressing your thumb into the middle to make an indentation.
Pre-heat a grill or grill pan over medium-high heat. Oil a grill pan with spray, or use a cloth soaked in olive oil and tongs to wipe oil onto a grill. Immediately add the burgers and cook for 4-5 minutes on each side. If using cheese, add to burgers in the last 1-2 minutes of cooking.
Toast buns and add lettuce, tomato and onion. Top with cooked burgers, and spread more aioli onto top buns. Serve hot.
