Mrs. C's Irish Soda Bread
4 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 stick of butter (1/4 c.) room temperature
2 c. raisins
1 1/3 c. buttermilk
1 c. sour cream
2 eggs
1 tsp. baking soda
Preheat oven to 350 degrees.
In a large bowl, mix together flour, sugar and baking powder. Cut butter into pats and add to dry mixture. "Cut" in using a fork until butter forms small crumbly pieces.
Add raisins into dry mixture and stir until evenly distributed.
In a second bowl, combine buttermilk, sour cream, ONE egg and baking soda. It will form small bubbles as you stir because of the baking soda.
Create a well in the dry ingredients and pour the wet ones into it. Stir with a wooden spoon until a very sticky dough comes together.
Turn dough out onto a well floured surface and knead a few times until smooth.
Grease either 2 loaf pans or 1 8x8 cake pan with oil. Place dough in pan. Use a sharp knife to cut an "X" into the top of the bread.
Scramble the second egg and brush over the surface of the dough.
Bake at 350 for an hour to an hour and 15 minutes.
