Memorial Day Recipe Roundup!

It’s the weekend before Memorial Day and I’m getting ready to head down the shore with family for a whole week! I’m so excited I can’t stand myself! And of course, we’ve got a full menu of all the delicious things we plan to cook and eat together! So I thought I’d share our menu with you! Check out some great ideas of what to make for the holiday weekend and all Summer long! Don’t forget to grab a copy of my Summer Grilling Book as well!

First off, you definitely want to try my chicken marinade. It’s super simple and you just bring it all together in a blender! Let the chicken marinate while you hit the beach, then toss on the grill when you get home! Save that spice mix for tacos too!

Pair that grilled chicken with one or both of these summery salads! The watermelon one is light and fresh and the corn one is rich and satisfying! Both are delicious!

You’ve got to try my turkey burgers! The secret here is blending mayo into the patties! It makes a rich and juicy burger that’s on par with your favorite beef burger! Stack ‘em tall with all the fixings and serve them up for the family BBQ!

Serve those burgers with this red, white and blue potato salad for a fun and festive side! Mixed baby potatoes are what creates a perfectly patriotic side dish!

Looking for a classic Italian combo for your Memorial Day weekend? Try these stuffed zucchini and peppers! These are a light and easy appetizer to make that will have your guests happily noshing! You can serve them warm or at room temp!

Follow those up with one of the easiest pasta dishes ever! Simply grate zucchini and create a quick and easy “no cook” sauce with ricotta and some pasta water! This is perfect for when you’re just trying to get those leftover odds and ends out of the fridge after the party’s over!

What’s a holiday BBQ without dessert!? Keep it red, white and blue with this super easy berry cobbler! The crumble on top is loaded with sneaky good-for-you ingredients but you’ll never know it from the taste! I also love a cobbler because it doesn’t require as much time and effort as other baked goods!

Finally make sure everyone is topped off with their favorite flavor of my family’s famous sangria! My Dad is known for his red sangria. My aunt (his little sis!) is known for her white. She actually refers to it as “the giambot of alcohol!” Meaning she just throws whatever’s in the liquor cabinet in! That’s not necessarily recommended - but it never hurts!

Salute to you and I hope you have an relaxing Memorial Day weekend and an incredible Summer!
