Grammy's Pizza Gain
Makes 2 pies
4 pie crusts
1 1/2 lbs prosciuttini (peppered ham, ask the deli to slice it 1/4 inch thick)
pepperoni (ask the deli to slice it 1/4 inch thick)
3/4 sweet Italian sausage meat
2 basket cheese
8 eggs
1 c. ricotta
3/4 c. parmigiano cheese
pinch of baking powder
Preheat oven to 350°. Prepare 2 pie dishes with bottom crusts.
Brown sausage meat in a saute pan until cooked through. Drain onto a paper towel lined plate. Set aside.
Dice prosciuttini, pepperoni and basket cheese into small cubes. Combine in an extra large bowl. Add in sausage meat.
Combine eggs with ricotta and parmigiano. Pour over meat mixture. Add in baking powder and mix well.
Split the meat mixture evenly between the 2 pie dishes. Top with crust, pinch edges, and decorate is desired. Brush the tops of the pies with egg wash.
Bake for 1 1/2 hours or until crusts are golden brown.
